Reflections of a Favorite Teacher

Not sure where or when my comments will post...but I felt like I needed to share on mine as well.


"Oh, my!

I grew up in a small town in Northwest Arkansas (Prairie Grove), graduating class size of 63, graduated 1984. My favorite class began with Home Economics (basic sewing, cooking), Mrs. Phyllis McGinity. I loved that class, and the way she taught. She made learning of cuts of beef fun. She talked with her hands, and would giggle throughout her lecture portion. Her eyes would close and she would smile when comments weren’t correct, but she would let you work it through. I took basic child education classes, to advanced cooking classes. My senior year, I had a free period, and became her assistant.

She really did mean the world to me. As a graduating gift, she gave me “Apples of Gold.” A beautiful little book with quotes, and scriptures for everything in life. The inscription meant the world to me, and all it said was “Thanks for smiling when I taught.” There was more written, but this meant the most.

I did attend college, but never went past the first year due to many things. I still regret not getting a degree in Home Economics, but believe that I have been gifted by her teachings, and carry many with me daily.
I think I will send her a Thank You. Teachers need to know.

Little things

I know a lot of stuff.  Random stuff.  I have no idea when or where I learned any of it, but I know stuff.

I was told a moment ago that I should blog about the stuff as it comes into my head.  This is not a good thing.  You see, I write like I talk, and that is in circles, so bear with me on this one.

Stuff in children's hair...you know, the stuff you can't name because you have no idea what it is...well, if your child gets something paste-like...you can use:  peanut butter, mayonnaise, conditioner, baby oil or lotion or Vaseline.  If you use any of these products, please wash your child's hair after removing the foreign substance.  If regular washing with shampoo doesn't remove all of the oil, use Coke.  Yes, coke.  The acid will remove the oil.  Then wash with shampoo.

Hopefully, you can instill a life lesson if it was gum or whatever with, "I told you" or not - your choice.

Girl Time

We all need it.  At least the majority of my friends do - girlfriend time. 
My hubby, David, is wonderful.  He is my best friend. 
But sometimes I just need an hour or two, or maybe a whole 
weekend to spend just laughing.

 We have known each other for 10 plus years.
We have been through a lot individually, and have always been there for each other.
Even when we don't want anyone there.
Girl friends are precious.

I have been blessed with wonderful friends.
I got to spend time at Julie's yesterday with my scrapbook girls.
We haven't known each other as long, but the friendships are precious to me as well.

I have decided to separate the recipes from this blog, and try wordpress.com at the same time.  The transition has not been easy for me, and I thought I was more aware of web techno-garbo stuff.

Happy Fourth!

Happy Independence Day!

It is a four day weekend for me, 
and I do believe that I love being home.
We are in a place where I need to work, 
but one day I will be able to be at home full time.
Until then...  

I did a little around the house on Friday, but not much.
Yesterday (Saturday), I truly just relaxed. 
Carmen and I watch a couple of movies, and had popcorn.
Today, we stayed home from church, 
but I got up and seemed to get busy.
No one around here likes it when I get "productive".  
I seem to go from room to room, but after a good bit, 
I have accomplished a lot. 
Not anything specific.  Just stuff.  

Hubby and Stephen will be going fishing later at Hubby's parents dock.
Carmen is working again (Thank you God!), 
and will meet us later to watch the fireworks put on by
the City of Fort Walton, and then we will turn directions
and watch the City of Destin fireworks. 

When I grew up, I got sparklers.
Really.  That is it.  Oh, and if I had any babysitting money,
I would get those champagne bottle poppers (with paper streamers).
Those were fun. It was enough.  When I got older, I would meet 
friends and attend the show at the Northwest Arkansas Mall.
That was fun, but the traffic was crazy.

I like this holiday. 
We are blessed to have a home.  
A free place to express our thoughts, 
worship where we want.
Grateful.

Thoughts on Purses

I personally own several purses. 

Okay a lot of purses. 
Ones that are in protective covers, and a lot
just on a shelf, tempting me.

I like colors, leather, classic, odd, really doesn't matter.
I have sold many on E-bay, and then gone and bought more.

I am not as bad with shoes...but purses. 
A new purse always makes me feel better.  
Recently, I have been "shopping" in my closet, 
trying to become more aware of spending.

How many purses do you own? 
And, which one is your favorite and why?
Do you carry it until it is torn, ratty, and done?

Sauteed Onions and Mushrooms

London broil is most certainly fine without sauteed onions and mushrooms, 
but when your wonderful hubby brings home baby portobello
and button mushrooms, you just have to cook them.
3 sweet Valida onions, sliced
 1/2 container each: mini portobella mushrooms 
and button mushrooms pre-sliced.
Salt and pepper
2 teaspoons olive oil
2 or 3 dashes of Worcestershire Sauce
Heat oil.  Add onions and pepper. Cook until translucent.
Add mushrooms and butter.  
Do not add salt until the mushrooms turn somewhat brown. 
Then a bit of salt, and Worcestershire.  
Cook until brown and moisture is evaporated.  
 Serve with medium-rare London Broil, and maybe a Caesar Salad.
 Enjoy!

Caeser Salad

Sort of...

Romaine lettuce, chopped.  
Green onions, chopped.
 Croutons (see below)
Dressing:
1 cup oil (vegetable)
1/2 vinegar
1 to 2 cloves of garlic, minced.
salt and pepper
1/2 dry mustard
1 tablespoon Worcestershire sauce
1/2 cup Parmesan cheese

I combined several recipes I found on allrecipes.com.  
I like anchovies but I don't have any on hand. 
Also, raw eggs and I don't get along very well with the auto immune.

Every recipe called for blending the ingredients. 
I loaned my mini blender to a family with a little one.  
So, what to do?  Whisk, baby, whisk.

Croutons:  2 teaspoons olive oil, 2 teaspoons butter, salt and pepper to taste, 
and any leftover day or two old bread, tear or chop.  
Heat oil and butter, toss in bread and seasonings.  
Toast until golden brown.

Assembly:
Lettuce - green onions - spoon over dressing - cheese - croutons.

Enjoy!
